What to do, What to do, with all that soup?



Fall is upon us and the change in weather leads to the change in coupons. If you haven't noticed coupon inserts now have soups, pastas, more meats, and soon hot chocolate coupons! Also, most stores are starting to run promo's on the same items, see this week's sales here. IF you are like me you love it! I stock up in a big way on these deals because:
1. My husband LOVES soup!
2. My son eats soup!(Big win!)
3. Can's of soup make a great donation item
4. Soups can be a great inexpensive base for some yummy and quick meals!

Last year I stocked up on so much of the classic Progresso soup I still have 6 cans left. I wanted to come up with some different ways of using them other then just heating them up and having soup :)

Beef Roast with Progresso Classic Vegetable Soup

Ingredients:
Salt and Pepper
1 1/2 or 2 lbs Beef Roast
2 Cans of Progresso Classic Vegetable Soup (this has carrots, green beans, potatoes, corn, and red beans)

To Cook:
Lightly Salt and Pepper both sides of roast
Place roast in crockpot
Pour two can's of Progresso Classic Vegetable soup over roast
Cook on low  6-8 hours

This impromptu receipe was a hit! My husband ate just about all of it before I even got home from work ;)

So Total Cost for this meal which could serve 4-6 easily:
2 can's of Progresso Soup -2.00
1 1/2 lb beef roast (from Hoffman's meats) 4.67
Total: 6.67!

Chili with Campbell's Tomato Soup and Hunt's Tomato Paste

Ingredients:
1-2 lbs of ground hamburger
1 Can of Campbell's Tomato Soup
1 Can of Hunt's Tomato Paste
1 Can of desired beans (I use kidney)
1 Can of Rotel Chili's
1/4 teaspoon Cayenne pepper or chili powder
1/4 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
* I also added hot sauce, we like spicey :)

To Cook:
*You can Brown ground beef in skillet before putting it in the crock pot if you desire
Place thawed ground beef in crockpot breaking it up
open and dump Campbell's tomato soup, Hunt's tomato paste, Rotel Chili's
Drain and Rinse Can of beans, then dump
Add Cayenne, garlic, and onion powders
Give a good stir to mix ingredients
Cook on Low 6-8 hours

 This chili receipe was YUMMY! It took me 5 minutes to fix in the morning I set all my ingredients out with crockpot the night before and thawed the hamburger in the refrigerator!

Total Cost of this Chili?
1 lb Hamburger - 2.97
Can of Tomato Soup-.47
Can of Tomato Paste-.33
Can of Kidney Beans-.69
Can of Rotel Chili's-.89
Spices were on hand so no cost!

Total cost: 5.35! Serves 4-6
